Healing Ayurvedic Chili for Diverticulosis

Ingredients:

1 cup mung beans (soaked overnight and drained)

1 cup basmati rice

1 teaspoon cumin seeds

1 teaspoon fennel seeds

1 cup chopped vegetables (such as zucchini, carrots, and bell peppers)

1 cup chopped tomatoes

1/2 teaspoon turmeric

1/2 teaspoon coriander powder

1/2 teaspoon cardamom powder

Salt, to taste

4 cups water

Instructions:

In a large pot, heat the ghee or coconut oil over medium heat. Add cumin and fennel seeds, and let them sizzle until they release their aroma.

Stir in the chopped vegetables and sauté for a few minutes until they begin to soften.

Add the tomatoes, turmeric, coriander powder, and cardamom powder. Sauté for another couple of minutes.

Stir in the soaked mung beans, rice, salt, and water. Bring the mixture to a boil, then reduce the heat, cover, and simmer for 30–40 minutes, or until the mung beans and rice are tender.

Serve the chili hot, garnished with fresh cilantro leaves.
